Mathilde acquired her first LLM in International Trade & Investment Law from Maastricht University, the Netherlands, and her second LLM in Food Law from LUISS Guido Carli University, Rome, Italy. She is a food law and regulatory expert with experience across the whole food supply chain around the world. She has worked for law firms, an IP firm, Japanese and French governmental institutes, the Food and Agriculture Organization of the United Nations (FAO), a public affairs consultancy, ADM, and her food law consultancy.
Mathilde is a renowned expert in the alternative protein space and has worked with many trailblazers ranging from foodtech and biotech startups like FORMO and Planted, to VCs like Blue Horizon and Peak Bridge. She also writes for Vegconomist.com articles on food legislation and public food policy. She has been interviewed for a dozen podcasts and regularly intervenes at conferences to explain food law and regulatory matters.
