Stacey Skaalure, Ph.D.
Alternative Proteins, Cell and Plant-Based Technologies, Cultivated Meat, Alternative Dairy
Stacey Skaalure has extensive experience in tissue engineering and biomaterials research, with a Ph.D. in chemical and biological engineering from the University of Colorado, and 5 years of postdoctoral research experience at Imperial College London, where her work was funded by two prestigious international fellowships. Due to her interests in food technology and sustainability, since 2019 she has applied her interdisciplinary skill set to support the growing alternative proteins industry. She has broad experience working in this space, which includes cell-based, fermentation, and plant-based technologies. She was a research fellow at the Good Food Institute where she published a comprehensive review article on scaffolding for cultivated meat, and was a guest editor for a special issue on ‘Biomaterials for Future Foods’ in the journal Biomaterials. She was the science and technology lead with Counterfactual Ventures and has worked as a consultant, advisor, and project manager for a variety of alternative protein start-ups and investors focused on cultivated meat and alternative dairy. She has experience conducting technical due diligence for investors, researching and assessing the technical feasibility of new concepts, applying for grants and funding for new technologies, and designing and managing R&D programs.
